Whenever we do a new build of Myriad we test all the installers on a Windows Virtual image - this was Virtual PC, but is now Hyper-V - and we haven't had any problems testing RVT in that environment so I suspect you will be fine. That said, of course we are only testing to prove that the installation process itself works fine and that RVT then loads and records some sample links correctly, we haven't done any long term testing of RVT itself in that type of setup, but as long as the host box has lots of resources then I can shouldn't imagine there will be any issues.
